CROCK POT POTATO SOUP

5-6 potatoes, peeled and diced
1 onion, chopped
1 lg. stalk celery, sliced
4 chicken bouillon cubes (or 4 cups chicken stock)
1 tbs. parsley flakes
5 c. water ( one if using chicken stock)
1 tbs. salt (less if desired)
Pepper
1/4-1/3 c. butter (1/2 is better!)
1 (13 oz.) can evaporated milk

Put all ingredients in except evaporated milk in crock pot. Cook on HIGH for about 8 hours or until potatoes are tender. Check every couple of hours. During last hour turn down to LOW add milk. Leave on LOW or turn OFF until ready to serve.
