hey clint -i know we don't correspond much, but this post and your new "diet" are near and dear to me. i became diabetic about 4 years ago, and thus, had to REALLY cut down on the carbs. the most difficult for me is bread. i eat A LOT of asian food, so rice is sometimes a temptaion too. i am a pastry chef, and i have a sweet tooth from time to time and i must taste a little while i work, of course. it become easier once you realize the effect it is having on your body - even if you are not diabetic. the hardest part for me was actually having to think about how i "use" food and think about what i put in my body every day. everytime i make a decision about what to eat, it is on my mind. i sometimes decide to eat more carbs than other times, and i am ok with that, as long as i am aware of what the effect is. a couple of suggestions - although i don't know how you eat...
when you want a salty snack - or get the munchies - NUTS! - i get pistachios (which i love) in the shell. they are low carb, salty, delicious, and you have to work at them to eat them, so you eat less.
when you HAVE to have something sweet...chocolate is better than other sugary stuff like "candies" and there are lots of sugar free chocolates out there now - not GREAT, but better than nothing.
when i make dinner now and i want that feeling of carbs like mashed potatoes, say. i do this amazing broccoli thing that we made at LOLA - blanch broccoli, drain, add shallots, garlic, salt, pepper, lots of olive oil and some lemon juice, and pulverize in the food processor...it stays chunky in a groovy way, but you get that mashed "starchy" sensation. SOOOOO good and good for you.
anyway there are other fun things too, if you ever want to go for low carb food and bitch together - let me know. good luck, kiddo. cheers. shannon
I've heard of the broccoli recipe but with Cauliflower which makes it really like mashed potatoes. I use real butter instead of olive oil.
Also, I'm a diabetic as well, and have had to really watch what I eat right now because I cant afford my meds till my insurance kicks in from work. So I munch on celery with almost every meal, and sometimes make a meal of it all by itself. The weight is slowly coming off, even though I'm not 100% low carb. Italians can't exist without pasta.
it was weird - my diabetes is not due to weight - i am not overweight...not sure where it came from, as there isn't a family history either. damn luck!!
hey - i have no insurance either, but my meds are only about $50 / month. glucophage generic and lisinopril.
not sure what you were on, but you mmight think about generics...?
Try Weight Watchers. I lost three pounds last week and I had beer and nachos on Wednesday night! (Unpaid testimonial) Of course, i balance it out with lots of cardio and a fair amount of weights.
